- Start with cooked chicken, which can be shredded rotisserie chicken, grilled chicken, or any leftover chicken you may have in the fridge.
- In a small saucepan over medium heat, combine the shredded chicken and BBQ sauce. Stir it well, letting it simmer for about 5-7 minutes until heated through.
- While the chicken is heating, in a large bowl, place a serving of cooked quinoa or brown rice as the base.
- Spoon a generous amount of cottage cheese on top of the quinoa or rice.
