  • 1 cup BBQ sauce Your favorite brand or homemade.
  • 1 cup low-fat cottage cheese
  • 1 cup cooked quinoa or brown rice Optionally, you can use other bases.

  • diced avocado For extra creaminess.

Preparation
  1. Start with cooked chicken, which can be shredded rotisserie chicken, grilled chicken, or any leftover chicken you may have in the fridge.
  2. In a small saucepan over medium heat, combine the shredded chicken and BBQ sauce. Stir it well, letting it simmer for about 5-7 minutes until heated through.
  3. While the chicken is heating, in a large bowl, place a serving of cooked quinoa or brown rice as the base.
  4. Spoon a generous amount of cottage cheese on top of the quinoa or rice.
  5. Once the BBQ chicken is ready, spoon it on top of the cottage cheese layer. Feel free to add your favorite toppings.
