  • 2 pieces chicken breasts, boneless and skinless
  • 2 cups fresh green beans, trimmed
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Optional: lemon zest or juice for extra flavor

Preparation
  1. Pat the chicken breasts dry with paper towels and season both sides with salt and pepper.
Cooking the Chicken
  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chicken breasts and cook for about 5-7 minutes on each side until golden brown and cooked through.
  2. Transfer the chicken to a plate and cover with foil to keep warm.
Sautéing the Green Beans
  1. In the same skillet, add the remaining tablespoon of olive oil, then add the trimmed green beans and garlic. Sauté for about 5-6 minutes until tender but still bright green, seasoning with salt and pepper.
Combining and Serving
  1. Return the chicken to the skillet with the green beans, squeezing in some fresh lemon juice or adding lemon zest if desired. Heat together for a minute or two, then plate up and enjoy!

Notes

For enhanced flavor, marinate the chicken in olive oil, garlic, and lemon juice if time allows. Cook on medium-high heat for a nice sear. Adjust cooking time if cutting green beans into smaller pieces. Spice it up with red pepper flakes if desired.
