Preparation
- Pat the chicken breasts dry with paper towels and season both sides with salt and pepper.
Cooking the Chicken
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chicken breasts and cook for about 5-7 minutes on each side until golden brown and cooked through.
- Transfer the chicken to a plate and cover with foil to keep warm.
Sautéing the Green Beans
- In the same skillet, add the remaining tablespoon of olive oil, then add the trimmed green beans and garlic. Sauté for about 5-6 minutes until tender but still bright green, seasoning with salt and pepper.
Combining and Serving
- Return the chicken to the skillet with the green beans, squeezing in some fresh lemon juice or adding lemon zest if desired. Heat together for a minute or two, then plate up and enjoy!
Notes
For enhanced flavor, marinate the chicken in olive oil, garlic, and lemon juice if time allows. Cook on medium-high heat for a nice sear. Adjust cooking time if cutting green beans into smaller pieces. Spice it up with red pepper flakes if desired.
