  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp salt
Wet Ingredients
  • 2 large eggs
  • ½ cup vegetable oil or melted coconut oil Choose based on preference.
  • 1 tsp vanilla extract
Filling
  • 2 cups peeled and diced apples About 2 medium apples.

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt.
  3. In another bowl, beat the eggs, then add the oil and vanilla extract and whisk until blended.
  4. Pour the wet ingredients into the dry ingredients and gently stir until just combined.
  5. Fold in the diced apples and chopped walnuts, ensuring they’re evenly distributed.
  6. Pour the batter into the prepared loaf pan and smooth the top. Bake for about 50-60 minutes, or until a toothpick inserted comes out clean.
  7. Let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  8. Slice and serve warm or at room temperature.

Notes

For substitutions, consider using almond flour for gluten-free or swapping brown sugar for a caramel flavor. To store leftovers, keep in an airtight container for up to 3 days or freeze for up to 3 months. Reheat slices in the microwave or oven.
