Preparation
- Be by rinsing the cod fillets under cold water and patting them dry with paper towels. Season both sides of the fillets with salt and pepper.
Cooking
- In a medium-sized skillet over medium heat, melt the unsalted butter until it foams, but doesn’t brown.
- Add the minced garlic to the melted butter and cook for about 30 seconds until fragrant.
- Mix in the chopped parsley, dill, and lemon juice.
- Gently place the seasoned cod fillets into the skillet. Cook for 4-5 minutes on each side, or until the fish flakes easily with a fork.
- Once cooked, remove the fillets from the skillet and drizzle the buttery herb mixture over the top. Serve warm.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to three days. For freezing, place cooled fillets in a freezer-safe container for up to two months. Reheat in a skillet over low heat or in the microwave with a splash of water.
