Pasta and Sausage
  • 8 oz pasta (your choice: penne, rotini, or spaghetti)
  • 1 lb smoked sausage, sliced
Vegetables
  • 1 cup bell peppers, chopped (red, yellow, or green)
  • 1 cup onion, diced
  • 2 cloves garlic, minced
Creamy Sauce
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • to taste Salt and pepper

Preparation
  1. Cook the Pasta: Begin by cooking your pasta according to the package instructions until al dente. Once done, drain and set aside.
  2. Cook the Sausage: In a large skillet, heat the olive oil over medium heat. Add the sliced smoked sausage to the skillet and cook for about 5-7 minutes until it’s browned and sizzling.
  3. Sauté Vegetables: Next, toss in the chopped bell peppers, diced onion, and minced garlic. Sauté the mixture for an additional 5 minutes or until the vegetables are tender.
  4. Create the Creamy Sauce: Pour in the heavy cream and stir, bringing the mixture to a simmer. Allow it to cook for a couple of minutes until the cream slightly thickens.
  5. Combine with Pasta: Lastly, add the cooked pasta to the skillet, mixing it well to coat with the creamy sauce. Stir in the grated Parmesan cheese and season with salt and pepper to taste.
  6. Serve: Once everything is combined and warmed through, serve the pasta immediately, garnished with fresh parsley if desired. Enjoy!

Notes

For added spice, try using spicy smoked sausage or adding red pepper flakes. You can also substitute with whole grain or gluten-free pasta. Remember to taste as you go!
