Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon pumpkin pie spice
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter, melted
  • 1 cup pumpkin puree
  • 1/2 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
Topping
  • 1/4 cup brown sugar for topping
  • 1/4 cup chopped nuts optional

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the flour, granulated sugar, pumpkin pie spice, baking powder, and salt. Stir until mixed well.
  3. In a separate bowl, whisk together the melted butter, pumpkin puree, milk, egg, and vanilla extract until well blended.
  4. Gradually add your wet mixture to the dry mixture, stirring gently until just combined. Avoid overmixing.
  5. Grease a loaf pan or line it with parchment paper.
  6. Pour the batter into the prepared loaf pan. Sprinkle brown sugar on top along with the optional chopped nuts.
Baking
  1. Bake for about 25-30 minutes or until a toothpick inserted in the center comes out clean.
  2. Allow the bread to cool for a few minutes, then transfer it onto a wire rack.
  3. Once cool enough to handle, pull apart the fluffy pieces and serve warm.

Notes

Store leftovers in an airtight container for 3-4 days in the refrigerator. For longer storage, freeze pieces wrapped in plastic wrap for up to 3 months. Reheat in the oven at 350°F (175°C) or microwave for 30 seconds.
