Method
 

Preparation
  1. Gather all your ingredients and set them out on the counter for easy access.
  2. In a skillet over medium heat, lightly toast the pumpkin seeds for about 3-4 minutes, stirring frequently until they are fragrant.
  3. In a food processor, combine the toasted pumpkin seeds, fresh basil leaves, garlic, and lemon juice. Pulse a few times to break down the ingredients.
  4. With the processor running, slowly drizzle in the olive oil until your pesto reaches your desired consistency.
  5. Add the grated Parmesan cheese, salt, and pepper and blend until everything is combined.
  6. Enjoy immediately or store for later in an airtight container.

Notes

For a nut-free version, substitute pumpkin seeds with sunflower seeds. For a vegan option, replace Parmesan with nutritional yeast. Store in the refrigerator and enjoy within a week.
