Ingredients
  

For the crust
  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
For the filling
  • 1 cup sweetened condensed milk
  • 1 cup pumpkin puree
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
For the toppings
  • 1 cup chocolate chips
  • 1/2 cup pecans, chopped can be omitted for nut-free option
  • 1/2 cup coconut flakes

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the graham cracker crumbs with melted butter until fully mixed. Press this mixture firmly into the bottom of a greased 9×9 inch baking dish, forming a compact crust.
  3. In another bowl, combine the sweetened condensed milk, pumpkin puree, pumpkin pie spice, and vanilla extract. Stir until the mixture is smooth and well-combined.
  4. Pour the pumpkin filling over the graham cracker crust and spread it out evenly.
  5. Sprinkle the chocolate chips, chopped pecans, and coconut flakes over the pumpkin layer, pressing them down slightly.
Baking
  1. Place the baking dish in the oven and bake for 25-30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
Serving
  1. Allow the bars to cool in the dish for about 10 minutes, then cut into squares and serve.

Notes

To keep your bars fresh, store them in an airtight container in the refrigerator for up to a week. They can also be frozen for up to three months. Reheat gently in the oven or microwave.
