Preparation
- Start by lining an 8-inch square baking dish with parchment paper.
- In a saucepan over medium heat, combine the pumpkin puree, sweetened condensed milk, and white chocolate chips. Stir continuously until the chocolate is melted and the mixture is smooth.
- Once the mixture is smooth, remove it from heat and add in the vanilla extract, pumpkin pie spice, and a pinch of salt. Stir until well combined.
- Pour the fudge mixture into your prepared baking dish, spreading it evenly with a spatula.
- Cover the dish with plastic wrap and refrigerate for about 2-3 hours, or until the fudge is set.
- Once the fudge is firm, lift it out of the dish using the parchment paper. Cut it into squares, and if desired, sprinkle with chopped nuts and a dash of cinnamon.
Notes
For a creamier texture, use high-quality white chocolate. To customize flavor, add a touch of maple syrup or a splash of almond milk. Ensure the fudge chills long enough to avoid crumbling.
