Ingredients

Main Ingredients
  • 8 slices slices of bread (preferably day-old)
  • 1 cup canned pumpkin puree
  • 4 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 cup brown sugar
  • 1/2 teaspoon salt
  • Butter for greasing

Method

Preparation
  1. Begin by preheating your oven to 350°F (175°C). Grease a 9×13-inch baking dish with a bit of butter to prevent sticking.
  2. For the best texture, start by lightly toasting the 8 slices of bread. This step helps to prevent the casserole from becoming soggy.
  3. Cut the toasted bread into cubes and arrange them in the prepared baking dish evenly.
  4. In a bowl, whisk together the canned pumpkin puree, eggs, milk, vanilla extract, ground cinnamon, ground nutmeg, brown sugar, and salt until smooth.
  5. Pour the pumpkin mixture evenly over the bread cubes, ensuring every piece is well-coated.
  6. Allow the dish to sit for about 10-15 minutes, giving the bread a chance to soak in the delicious custard.
  7. Place the casserole in the preheated oven and bake for about 30-35 minutes or until the top is golden brown and a knife inserted in the center comes out clean.
  8. Let it cool for a couple of minutes before slicing. Serve warm, and enjoy!

Notes

For a healthier version, try using whole-wheat bread instead of white. You can also use almond or oat milk for a dairy-free option. Prepare your casserole the night before for a hassle-free breakfast. If you have leftovers, store them covered in the refrigerator for up to 3 days.
