  • 4 large 4 large eggs
  • 1 cup 1 cup milk Substitute with almond or oat milk for a dairy-free option.
  • 1 cup 1 cup pumpkin puree
  • 1/2 cup 1/2 cup sugar
  • 1 teaspoon 1 teaspoon vanilla extract
  • 1 teaspoon 1 teaspoon cinnamon
  • 1/2 teaspoon 1/2 teaspoon nutmeg
  • 1/4 teaspoon 1/4 teaspoon salt
  • to taste Maple syrup (for serving)
  • to taste Powdered sugar (for serving)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Cut the loaf of bread into cubes or slices.
  3. In a large bowl, whisk together the eggs, milk, pumpkin puree, sugar, vanilla, cinnamon, nutmeg, and salt until well combined and smooth.
  4. In a greased casserole dish, layer the bread pieces, pouring the custard mixture over them. Gently press the bread to ensure it's all soaked.
Baking
  1. Cover the dish with foil and bake for 30 minutes.
  2. Remove the foil and bake for an additional 15-20 minutes until the top is golden and set.
  3. Let it cool slightly before serving. Drizzle with maple syrup and dust with powdered sugar for that beautiful finishing touch!

Notes

For a dairy-free option, use almond or oat milk. Prepare the casserole the night before to save time in the morning. Ensure bread is well-coated with custard to avoid dry spots.
