Ingredients
  

Wet Ingredients
  • 1 cup pumpkin puree Canned or homemade
  • 1/2 cup sugar
  • 1/4 cup brown sugar Packed
  • 2 large eggs Room temperature
  • 1/4 cup vegetable oil Can substitute with coconut oil
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 2 cups all-purpose flour Can substitute with whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease the donut pan with oil or cooking spray.
  2. In a large bowl, combine pumpkin puree, white sugar, brown sugar, eggs, vegetable oil, and vanilla extract and whisk until fully blended.
  3. In another bowl, mix all-purpose flour, baking powder, baking soda, cinnamon, nutmeg, and salt, whisking well to avoid lumps.
  4. Gradually fold the dry mixture into the wet mixture, being careful not to overmix.
  5. Using a piping bag or ziplock bag with a corner cut off, pipe the batter into the greased donut pan, filling each cavity about 2/3 full.
Baking
  1. Bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean. Let cool for a few minutes before transferring to a wire rack.
Serving
  1. Dust with powdered sugar or drizzle with your favorite glaze before serving.

Notes

Store uneaten donuts in an airtight container in the fridge for up to 3 days. They can be frozen for up to 1 month.
