Preparation
- Preheat your oven to 350°F (175°C) and prepare your muffin pan by greasing or lining it with paper liners.
- In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.
- In a separate large mixing bowl, whisk together pumpkin puree, vegetable oil, sugar, brown sugar, eggs, and vanilla extract until smooth.
- Gradually add the dry mixture to the wet mixture, stirring gently until just combined. Small lumps are okay.
- In another bowl, mix the softened cream cheese with a tablespoon of sugar.
Baking
- Spoon a little pumpkin batter into each muffin well (about two-thirds full), add a small spoonful of the cream cheese mixture on top, and gently swirl with a toothpick.
- Finish by topping with more pumpkin batter until the muffin cups are nearly full.
- Bake in the preheated oven for 20-25 minutes or until a toothpick inserted comes out clean.
Cooling
- Remove from oven, let cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
