Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
Cream Cheese Filling
  • 1/2 cup cream cheese, softened Make sure it's softened to ensure a smooth swirl.
  • 1 tablespoon sugar To sweeten the cream cheese slightly.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare your muffin pan by greasing or lining it with paper liners.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.
  3. In a separate large mixing bowl, whisk together pumpkin puree, vegetable oil, sugar, brown sugar, eggs, and vanilla extract until smooth.
  4. Gradually add the dry mixture to the wet mixture, stirring gently until just combined. Small lumps are okay.
  5. In another bowl, mix the softened cream cheese with a tablespoon of sugar.
Baking
  1. Spoon a little pumpkin batter into each muffin well (about two-thirds full), add a small spoonful of the cream cheese mixture on top, and gently swirl with a toothpick.
  2. Finish by topping with more pumpkin batter until the muffin cups are nearly full.
  3. Bake in the preheated oven for 20-25 minutes or until a toothpick inserted comes out clean.
Cooling
  1. Remove from oven, let cool in the pan for a few minutes, then transfer to a wire rack to cool completely.

Notes
