Method
Preheat Your Oven
- Start by preheating your oven to 350°F (175°C).
Prepare the Crust
- In a mixing bowl, combine the flour, butter, brown sugar, and salt. Mix until crumbly.
- Press the mixture evenly into the bottom of an 8x8-inch baking dish.
- Bake for about 10 minutes, or until golden.
Make the Filling
- In another bowl, beat the softened cream cheese until smooth.
- Add the pumpkin puree, granulated sugar, eggs, vanilla extract, cinnamon, nutmeg, and ginger.
- Beat until everything is well combined and creamy.
Combine and Bake
- Pour the cream cheese mixture over the pre-baked crust, smoothing it out evenly.
- Bake for an additional 25-30 minutes, or until the center is set.
Cool and Cut
- Allow the bars to cool at room temperature, then refrigerate for at least a couple of hours before slicing.
- Enjoy with a sprinkle of cinnamon or a scoop of whipped cream!
Notes
Store in an airtight container in the refrigerator for 5-7 days; freeze for up to 3 months. Thaw in the refrigerator overnight for best results.
