Preparation
- Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan.
- In a bowl, beat the softened cream cheese together with 1 cup of sugar until smooth. Set this aside.
Making the batter
- In another large bowl, mix the pumpkin puree, remaining 1/2 cup of brown sugar, vegetable oil, eggs, and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry mixture to the pumpkin mixture, stirring just until combined. Do not overmix.
Baking
- Pour half of the pumpkin batter into the prepared pan. Spread the cream cheese filling on top, and finish with the remaining pumpkin batter. Swirl with a knife for a marbled effect.
- Bake for about 45-50 minutes, or until a toothpick inserted in the center comes out clean.
- Allow it to cool a bit in the pan before cutting into squares.
Notes
Store any leftovers in an airtight container in the refrigerator for about 4-5 days. For freezing, wrap each slice tightly and place them in a freezer-safe bag for up to 2 months. Thaw overnight in the refrigerator and reheat gently in the microwave.
