Ingredients
  

For the cake batter
  • 1 cup pumpkin puree
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil can substitute with melted coconut oil or applesauce
  • 3 large eggs
  • 2 cups all-purpose flour can substitute with gluten-free blend
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
For the cream cheese filling
  • 8 oz cream cheese, softened ensure at room temperature for a smooth filling

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan.
  2. In a bowl, beat the softened cream cheese together with 1 cup of sugar until smooth. Set this aside.
Making the batter
  1. In another large bowl, mix the pumpkin puree, remaining 1/2 cup of brown sugar, vegetable oil, eggs, and vanilla extract until well combined.
  2. In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. Gradually add the dry mixture to the pumpkin mixture, stirring just until combined. Do not overmix.
Baking
  1. Pour half of the pumpkin batter into the prepared pan. Spread the cream cheese filling on top, and finish with the remaining pumpkin batter. Swirl with a knife for a marbled effect.
  2. Bake for about 45-50 minutes, or until a toothpick inserted in the center comes out clean.
  3. Allow it to cool a bit in the pan before cutting into squares.

Notes

Store any leftovers in an airtight container in the refrigerator for about 4-5 days. For freezing, wrap each slice tightly and place them in a freezer-safe bag for up to 2 months. Thaw overnight in the refrigerator and reheat gently in the microwave.
