Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter and sugar until light and fluffy, about 2-3 minutes.
- Add the pumpkin puree, egg, and vanilla extract to the mixture, and mix until fully combined.
- In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Gradually add the dry mixture to the wet ingredients and mix until just combined.
- Use a cookie scoop or tablespoon to drop rounded dough onto a lined baking sheet, leaving space between each cookie.
Baking
- Bake for about 10-12 minutes, or until the edges are lightly browned and centers are set.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
Frosting
- In a mixing bowl, beat together the softened cream cheese and butter until smooth.
- Gradually add powdered sugar and vanilla extract, mixing until creamy.
- Once the cookies are completely cooled, generously spread the cream cheese frosting on top of each cookie.
Notes
To keep cookies fresh, store in an airtight container in the fridge for up to 5 days. Un-frosted cookies can be frozen for up to 2 months. Reheat for about 10 seconds in the microwave for a fresh, warm cookie.
