Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix the pumpkin puree, sugar, brown sugar, and softened butter. Beat in the egg and vanilla extract until smooth.
- In another bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Gradually add the dry ingredients to the wet mixture, gently mixing until just combined.
- If using, fold in the nuts or chocolate chips.
- Using a cookie scoop or tablespoon, drop dough onto a greased or parchment-lined baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes or until edges are lightly browned.
- Cool on the baking sheet for a few minutes before transferring to wire racks to cool completely.
Notes
Store in an airtight container at room temperature for up to a week, or freeze with parchment paper between layers for up to three months. To reheat, microwave for 10-15 seconds or thaw at room temperature.
