Method
Prepare the Dough
- In a large bowl, combine 1 cup of warm milk, sugar, and active dry yeast. Let it sit for 5-10 minutes until foamy.
- Add melted butter, pumpkin puree, egg, salt, and spices, then mix well.
Mix the Flour
- Gradually add 2 cups of all-purpose flour to the wet mixture, stirring until a soft dough forms.
- Knead the dough for about 5 minutes until it’s smooth and elastic.
Let It Rise
- Place the dough in a greased bowl, cover it with a clean cloth, and let it rise in a warm area for about 1 hour or until it doubles in size.
Prepare the Filling
- While the dough rises, combine the brown sugar, cinnamon, nutmeg, and optional chopped nuts in a separate bowl.
Roll Out the Dough
- Once risen, punch down the dough and roll it into a rectangular shape and spread melted butter on top.
- Sprinkle the cinnamon mixture evenly across the rolled dough.
Shape the Rolls
- Carefully roll the dough tightly from the long end, then slice into 12 equal pieces.
- Place your rolls in a greased baking dish.
Second Rise
- Cover the rolls again and let them rise for another 30 minutes.
Bake
- Preheat the oven to 350°F (175°C). Bake the rolls for 20-25 minutes, or until golden brown.
Prepare the Icing
- If desired, mix cream cheese with a splash of milk and a bit of sugar to create an icing. Drizzle it over the warm rolls before serving.
Notes
To store, place in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months. Reheat in preheated oven at 350°F (175°C) for 10-15 minutes to maintain softness.
