Ingredients
  

For the Dough
  • 2 cups all-purpose flour Use gluten-free flour blend for a gluten-free option.
  • 1/2 cup pumpkin puree
  • 1/4 cup sugar
  • 1/4 cup milk Use almond or oat milk for dairy-free.
  • 1/4 cup butter (melted) Use vegan butter for dairy-free.
  • 1 packet active dry yeast
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp allspice
  • 1/2 tsp salt
  • 1 egg egg
For the Filling
  • 1/2 cup brown sugar
  • 1/4 cup chopped nuts (optional) Chopped walnuts or pecans work well.
For the Icing (optional)
  • 1/4 cup cream cheese Use dairy-free cream cheese if needed.

Method
 

Prepare the Dough
  1. In a large bowl, combine 1 cup of warm milk, sugar, and active dry yeast. Let it sit for 5-10 minutes until foamy.
  2. Add melted butter, pumpkin puree, egg, salt, and spices, then mix well.
Mix the Flour
  1. Gradually add 2 cups of all-purpose flour to the wet mixture, stirring until a soft dough forms.
  2. Knead the dough for about 5 minutes until it’s smooth and elastic.
Let It Rise
  1. Place the dough in a greased bowl, cover it with a clean cloth, and let it rise in a warm area for about 1 hour or until it doubles in size.
Prepare the Filling
  1. While the dough rises, combine the brown sugar, cinnamon, nutmeg, and optional chopped nuts in a separate bowl.
Roll Out the Dough
  1. Once risen, punch down the dough and roll it into a rectangular shape and spread melted butter on top.
  2. Sprinkle the cinnamon mixture evenly across the rolled dough.
Shape the Rolls
  1. Carefully roll the dough tightly from the long end, then slice into 12 equal pieces.
  2. Place your rolls in a greased baking dish.
Second Rise
  1. Cover the rolls again and let them rise for another 30 minutes.
Bake
  1. Preheat the oven to 350°F (175°C). Bake the rolls for 20-25 minutes, or until golden brown.
Prepare the Icing
  1. If desired, mix cream cheese with a splash of milk and a bit of sugar to create an icing. Drizzle it over the warm rolls before serving.

Notes

To store, place in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months. Reheat in preheated oven at 350°F (175°C) for 10-15 minutes to maintain softness.
