Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the pumpkin puree, sugar, brown sugar, melted butter, egg, and vanilla extract. Stir well until the mixture is smooth and homogenous.
- In a separate bowl, whisk together the all-purpose flour, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix!
- Gently fold in the chocolate chips, ensuring they are evenly distributed throughout the dough.
Baking
- Using a cookie scoop or tablespoon, drop spoonfuls of the dough about 2 inches apart on the lined baking sheet.
- Bake in the preheated oven for approximately 12-15 minutes or until the edges are golden.
- Once baked, remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
To keep your cookies fresh, store them in an airtight container at room temperature for up to a week. For longer storage, freeze for up to three months. Reheat in the microwave for 10-15 seconds or in the oven at 350°F for a few minutes.
