Ingredients
  

Wet Ingredients
  • 1 cup pumpkin puree Canned or homemade
  • 1/2 cup sugar Granulated sugar
  • 1/2 cup brown sugar Packed light or dark brown sugar
  • 1/2 cup melted butter Can substitute with coconut oil or ghee
  • 1 piece egg Large egg
  • 1 teaspoon vanilla extract Pure vanilla extract preferred
Dry Ingredients
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
Mix-ins
  • 1 cup chocolate chips Can substitute with white chocolate or dried fruit

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the pumpkin puree, sugar, brown sugar, melted butter, egg, and vanilla extract. Stir well until the mixture is smooth and homogenous.
  3. In a separate bowl, whisk together the all-purpose flour, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix!
  5. Gently fold in the chocolate chips, ensuring they are evenly distributed throughout the dough.
Baking
  1. Using a cookie scoop or tablespoon, drop spoonfuls of the dough about 2 inches apart on the lined baking sheet.
  2. Bake in the preheated oven for approximately 12-15 minutes or until the edges are golden.
  3. Once baked, remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

To keep your cookies fresh, store them in an airtight container at room temperature for up to a week. For longer storage, freeze for up to three months. Reheat in the microwave for 10-15 seconds or in the oven at 350°F for a few minutes.
