Preparation
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter, sugar, and brown sugar until light and fluffy (about 3-4 minutes).
- Add the egg and mix until well incorporated.
- Blend in the pumpkin puree and softened cream cheese until smooth and creamy.
- In a separate bowl, whisk together the all-purpose flour, baking soda, salt, and spices (cinnamon, ginger, nutmeg).
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Using a cookie scoop, drop rounded tablespoons of dough onto a lined baking sheet.
Baking
- Bake for about 15-18 minutes or until the edges are set and cookies are slightly golden.
- Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For extra flavor, top cookies with cinnamon, caramel, or chopped nuts. Store cookies in an airtight container at room temperature for up to 5 days, or freeze for up to 3 months.
