  • 1 cup onion, chopped Sauté until soft.
  • 1 cup shredded cheese Choose your favorite variety.

  • ½ cup breadcrumbs Use gluten-free breadcrumbs if necessary.
  • 2 whole eggs
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon nutmeg

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Chop the fresh pumpkin into small cubes and steam or boil until tender, or use canned pumpkin puree.
  3. In a skillet, sauté the chopped onion in a little oil until soft and translucent, about 5 minutes.
  4. In a large bowl, mix the cooked pumpkin, sautéed onions, shredded cheese, milk, breadcrumbs, eggs, salt, pepper, and nutmeg until well combined.
  5. Pour the mixture into a greased baking dish, spreading it evenly across.
  6. Bake in the preheated oven for about 30 minutes, or until golden and firm to the touch.
  7. Let it cool for about 10 minutes before serving and enjoy!

Notes

For extra flavor, consider drizzling melted cheese on top before serving. Store leftovers in an airtight container for up to 3 days in the fridge, or freeze for up to 2 months. Reheat at 350°F (175°C) for 20-30 minutes, covered with foil.
