Preparation
- Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking pan.
- In a large bowl, combine the pumpkin puree, sugar, vegetable oil, eggs, and vanilla extract. Whisk until smooth and well blended.
- In another bowl, sift together the flour, cocoa powder, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Gradually fold the dry mixture into the wet ingredients until just combined, being careful not to overmix.
- If using, fold in the chocolate chips into the batter.
Baking
- Pour the batter into the prepared pan and spread evenly.
- Bake for about 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Let the brownies cool in the pan before cutting them into squares.
Notes
To store, keep in an airtight container at room temperature for up to 3 days, refrigerate for a week, or freeze for up to 3 months. Thaw in the refrigerator or warm in the microwave.
