Brownie Base
  • 1 cup pumpkin puree Ensure it's Halal-compliant.
  • 1 cup sugar Can substitute with brown sugar.
  • 1/2 cup vegetable oil Can substitute with a vegetable-based oil for vegan option.
  • 2 large eggs Can substitute with flaxseed meal for vegan option.
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour Can substitute with whole wheat flour.
  • 1/2 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 cup chocolate chips (optional)

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  2. In a large bowl, combine the pumpkin puree, sugar, vegetable oil, eggs, and vanilla extract. Whisk until smooth and well blended.
  3. In another bowl, sift together the flour, cocoa powder, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. Gradually fold the dry mixture into the wet ingredients until just combined, being careful not to overmix.
  5. If using, fold in the chocolate chips into the batter.
Baking
  1. Pour the batter into the prepared pan and spread evenly.
  2. Bake for about 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  3. Let the brownies cool in the pan before cutting them into squares.

Notes

To store, keep in an airtight container at room temperature for up to 3 days, refrigerate for a week, or freeze for up to 3 months. Thaw in the refrigerator or warm in the microwave.
