Preparation
- Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg until well combined.
- In another bowl, whisk together the granulated sugar, brown sugar, oil, eggs, pumpkin puree, and vanilla, blending until smooth and creamy.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Avoid over-mixing; it’s okay if there are a few lumps!
Baking
- Pour the batter into your prepared loaf pan and smooth the top.
- Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean.
- Once baked, let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Frosting
- In the meantime, prepare your cream cheese frosting by beating together softened cream cheese and butter in a mixer until creamy.
- Gradually add the powdered sugar, vanilla, and a pinch of salt until well combined and fluffy.
- Once the bread is cool, spread the cream cheese frosting generously over the top, allowing it to drip down the sides if you’re feeling generous!
Notes
Store leftovers wrapped in plastic wrap or in an airtight container for up to three days. For longer storage, freeze slices wrapped individually for up to three months. Thaw in the refrigerator overnight or microwave for a few seconds.
