Preparation
- Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ground ginger.
- In a large bowl, combine the granulated sugar, brown sugar, pumpkin puree, vegetable oil, eggs, and vanilla extract. Mix until well blended.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Pour the batter into your prepared loaf pan and smooth the top with a spatula.
Baking
- Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
- Let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Frosting
- While the bread is cooling, prepare the frosting by beating together the softened cream cheese and butter until smooth.
- Gradually add the powdered sugar and vanilla extract, mixing until creamy.
- Once the pumpkin bread has cooled completely, generously spread the cream cheese frosting on top.
Notes
For added nutrition, substitute half of the all-purpose flour with whole wheat flour. Ensure the bread cools completely before frosting.
