For the Pumpkin Bread
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ground ginger
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
For the Cream Cheese Frosting
  • 8 oz cream cheese, softened
  • 1/4 cup butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ground ginger.
  3. In a large bowl, combine the granulated sugar, brown sugar, pumpkin puree, vegetable oil, eggs, and vanilla extract. Mix until well blended.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Pour the batter into your prepared loaf pan and smooth the top with a spatula.
Baking
  1. Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Frosting
  1. While the bread is cooling, prepare the frosting by beating together the softened cream cheese and butter until smooth.
  2. Gradually add the powdered sugar and vanilla extract, mixing until creamy.
  3. Once the pumpkin bread has cooled completely, generously spread the cream cheese frosting on top.

Notes

For added nutrition, substitute half of the all-purpose flour with whole wheat flour. Ensure the bread cools completely before frosting.
