  • 2 cups pumpkin puree
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) crushed tomatoes
  • 1 carrot, diced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Preparation
  1. Prepare Your Ingredients: Begin by chopping the onion, dicing the carrot, and mincing the garlic.
Cooking
  1. In a large skillet over medium heat, add the olive oil. Once hot, toss in the chopped onions and diced carrots. Sauté for about 5 minutes until they start to soften.
  2. Then, add the minced garlic and cook until fragrant (around 1 minute).
  3. Increase the heat slightly and add the ground beef to the skillet. Break it apart with a wooden spoon, cooking until it’s fully browned, about 7-10 minutes. Drain any excess fat if necessary.
  4. Stir in the pumpkin puree and crushed tomatoes, mixing thoroughly. Add in the dried oregano, along with salt and pepper to taste. Let this simmer for about 10-15 minutes.
  5. While the sauce simmers, cook your pasta according to the package directions. Drain and set aside.
  6. Once the sauce has thickened and all the flavors are well developed, combine it with your pasta.
  7. Toss it all together until your pasta is well-coated in the delicious Pumpkin Beef Bolognese sauce.
Garnishing
  1. If you’d like, sprinkle with some grated cheese or fresh herbs for an extra touch.
