Ingredients
  

Wet Ingredients
  • 1 cup pumpkin puree
  • 1 cup sugar
  • 1/2 cup vegetable oil Can substitute half with applesauce for a healthier option.
  • 2 large eggs
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan or line it with parchment paper.
  2. In a large mixing bowl, combine the pumpkin puree, sugar, vegetable oil, eggs, and vanilla extract. Whisk until smooth.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, and salt.
  4. Gradually add the dry mixture to the wet mixture. Mix until just combined, being careful not to overmix.
Baking
  1. Pour the batter into the prepared baking pan and spread evenly.
  2. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  3. Allow to cool in the pan for a few minutes before transferring to a wire rack to cool completely.
  4. Once cooled, cut into squares and serve.

Notes

These bars can be topped with maple syrup, powdered sugar, or whipped cream. Store in an airtight container at room temperature for up to 3 days, in the refrigerator for up to a week, or freeze for up to 3 months. To reheat, microwave for 15-20 seconds or warm in a preheated oven at 350°F for about 10 minutes.
