  • 4 large eggs At room temperature for fluffiest results.
  • 1 cup milk
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 4 tablespoons unsalted butter Can substitute with halal-friendly margarine.
Optional Toppings
  • Powdered sugar For dusting.
  • Fresh fruit For serving.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C) to achieve a beautifully puffed pancake.
  2. In a 9x13 inch baking dish, add 4 tablespoons of unsalted butter and place it in the preheating oven until melted.
  3. In a mixing bowl, whisk together the eggs, milk, flour, sugar, salt, and vanilla extract until smooth.
  4. Once the butter has melted and is bubbling, carefully pour the batter into the dish over the melted butter. Do not stir.
Baking
  1. Place the dish back in the oven and bake for 20 minutes until the edges are golden brown.
Serving
  1. Dust with powdered sugar and serve warm with fresh fruit.

Notes

For best results, ensure eggs are at room temperature and use a metal baking dish for even cooking. Store leftovers in an airtight container for up to 3 days.
