  • 1/4 cup chopped parsley
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Preparation
  1. In a food processor, pulse the peeled and deveined prawns until they are coarsely chopped. This will ensure a delightful texture in your Prawns Cake.
  2. In a large bowl, combine the minced prawns, breadcrumbs, grated cheese, chopped parsley, minced garlic, and eggs. Season with salt and pepper. Stir until well combined; you want a mixture that holds together well.
  3. Using your hands, shape the mixture into small cakes, about the size of your palm. Aim for about 1-inch thick patties for even cooking.
  4. Heat oil in a frying pan over medium heat. Once it’s hot, add the patties—do not overcrowd the pan. Cook for about 3-4 minutes on each side, or until they are crispy and golden brown.
  5. Remove the patties from the pan and let them drain on paper towels. Serve your Prawns Cake with a side of fresh salad or dipping sauce!

Notes

For leftovers, store in an airtight container in the refrigerator for up to 3 days or freeze for up to a month. Reheat in a preheated oven at 375°F (190°C) for about 10-15 minutes to maintain crispiness.
