Preparation
- Preheat your oven to 400°F (200°C). Peel and cube your potatoes into bite-sized pieces.
Cooking
- In a large pot, add the cubed potatoes and cover them with water. Bring to a boil and cook for about 10-15 minutes, or until the potatoes are fork-tender but not mushy.
- Drain the potatoes and return them to the pot. Add the butter, milk, salt, and pepper. Mash them gently until just combined, keeping some texture.
- Stir in the cheddar cheese and chopped chives until well incorporated.
- Transfer the mixture into a greased baking dish. For a beautiful golden top, sprinkle a bit more cheddar cheese on the surface.
- Bake in the preheated oven for 25-30 minutes until the top is golden brown and bubbling.
Serving
- Allow the Potato Cheddar Chive Bakes to cool for a few minutes before serving. Dish them out and watch them disappear!
Notes
Feel free to experiment with different cheeses like gouda or mozzarella. For time-saving, microwave the cubed potatoes to get them fork-tender. Don't over-mash the potatoes; maintain a delicious chunkiness for texture. Leftovers can be stored in the fridge for up to 3 days, or frozen for up to a month.
