  • 2 tablespoons fresh chives, chopped
  • 1/4 cup milk
  • 2 tablespoons butter

Preparation
  1. Preheat your oven to 400°F (200°C). Peel and cube your potatoes into bite-sized pieces.
Cooking
  1. In a large pot, add the cubed potatoes and cover them with water. Bring to a boil and cook for about 10-15 minutes, or until the potatoes are fork-tender but not mushy.
  2. Drain the potatoes and return them to the pot. Add the butter, milk, salt, and pepper. Mash them gently until just combined, keeping some texture.
  3. Stir in the cheddar cheese and chopped chives until well incorporated.
  4. Transfer the mixture into a greased baking dish. For a beautiful golden top, sprinkle a bit more cheddar cheese on the surface.
  5. Bake in the preheated oven for 25-30 minutes until the top is golden brown and bubbling.
Serving

Notes

Feel free to experiment with different cheeses like gouda or mozzarella. For time-saving, microwave the cubed potatoes to get them fork-tender. Don't over-mash the potatoes; maintain a delicious chunkiness for texture. Leftovers can be stored in the fridge for up to 3 days, or frozen for up to a month.
