Ingredients
  

Casserole Filling
  • 2 cups cooked chicken, shredded or diced Use leftover chicken or rotisserie chicken.
  • 1 can cream of mushroom soup Can substitute with cream of chicken for added flavor.
  • 1 cup frozen mixed vegetables Include peas, carrots, and corn.
  • ½ cup milk Add more if needed for desired consistency.
  • 1 cup cooked rice Use white or brown rice based on preference.
  • 1 cup shredded cheese Cheddar is recommended for a nice melty topping.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt
  • to taste Pepper

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) to get it nice and hot while you prepare the casserole.
  2. In a large mixing bowl, combine shredded chicken, cream of mushroom soup, frozen mixed vegetables, milk, cooked rice, garlic powder, onion powder, salt, and pepper. Stir until thoroughly mixed.
  3. Pour the mixture into a greased 9x13-inch baking dish, spreading it out evenly. Sprinkle shredded cheese on top.
Baking
  1. Place the casserole in the preheated oven and bake for about 30-35 minutes, or until the cheese is melted and bubbly.
  2. Once done, take it out from the oven and let it cool for a few minutes before serving.

Notes

For leftovers, store in an airtight container in the refrigerator for 3-4 days. Reheat in the microwave or oven; adding a splash of milk helps restore moisture.
