Preparation
  1. Gather all your ingredients. Crumble the feta cheese into a medium mixing bowl.
  2. Add the pomegranate seeds and chopped pistachios to the bowl with the feta.
  3. Drizzle in the olive oil, honey, and lemon juice. Season with a pinch of salt and black pepper to taste.
  4. Using a fork or spatula, gently mix all the ingredients together until combined, being careful not to mush the feta too much.
  5. Taste and adjust the seasoning if needed. If you prefer it sweeter, feel free to add a little more honey.
  6. Transfer the dip to a serving bowl, drizzle a bit more olive oil on top, and sprinkle some fresh herbs if you're using them.
  7. Pair it with pita chips, veggie sticks, or your favorite cracker.

For more on variations, substitute pomegranate seeds with finely chopped roasted red peppers to maintain vibrancy. Allow the dip to sit for 15 minutes before serving for best flavor. Leftovers can be stored in an airtight container in the fridge for up to three days.
