  • 2 pieces boneless, skinless chicken breasts Substitute with boneless thighs if preferred.
  • 2 cups water or chicken broth Ensure it’s halal.
  • 2 tablespoons shallots, finely chopped
  • 3 tablespoons olive oil
  • to taste Salt and pepper Season to taste.
  • as needed Fresh herbs (like parsley or thyme) for garnish

Method
 

Preparation
  1. Start by seasoning your chicken breasts with salt and pepper on both sides.
  2. In a medium pot, bring the water or chicken broth to a gentle simmer over medium heat.
Cooking
  1. Add the seasoned chicken breasts to the simmering broth and cover the pot.
  2. Allow the chicken to poach for about 12-15 minutes until it is white all the way through and no longer pink in the center.
  3. While the chicken is poaching, heat the olive oil in a small pan over medium heat.
  4. Add the finely chopped shallots and sauté until they are golden and aromatic, about 3-5 minutes.
Serving
  1. Once the chicken is cooked, remove it from the pot and let it rest for a few minutes before slicing.
  2. Drizzle the sautéed shallot oil over the sliced chicken, garnish with fresh herbs, and serve immediately.

Notes

Keep an eye on the chicken while it’s poaching to avoid overcooking. Leftover chicken can be stored in an airtight container for up to 3 days or frozen for up to 2 months.
