  • 4 medium plums, pitted and sliced Ensure the plums are ripe but firm.
  • 1/2 cup brown sugar
  • 1/4 cup butter Ensure it's halal-certified.
For the Cake Batter
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan with butter and sprinkle the brown sugar evenly across the bottom.
  2. Slice your plums and arrange them beautifully on top of the brown sugar layer, overlapping them for a stunning presentation.
Batter Preparation
  1. In a mixing bowl, whisk together the flour, baking powder, and salt.
  2. In another bowl, cream the butter and granulated sugar together until light and fluffy, about 3 minutes.
  3. Beat in the eggs one at a time, ensuring they are fully incorporated after each addition. Mix in the vanilla extract and milk until the batter is smooth.
  4. Gradually add the dry ingredients into the wet mixture until just combined; do not overmix.
Baking
  1. Carefully pour the batter over the plums in the prepared pan.
  2. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted in the center comes out clean.
Cooling and Serving
  1. Allow the cake to cool in the pan for about 10 minutes, then carefully invert onto a serving plate.
  2. Serve warm, optionally topped with whipped cream or a scoop of ice cream.

Notes

Store in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months. Thaw in the refrigerator overnight and warm in the oven at 350°F for about 10-15 minutes.
