Preparation
- Preheat your oven to 400°F (200°C).
- In a medium bowl, combine sliced plums, sugar, cornstarch, and vanilla extract. Toss gently to coat and set aside.
- On a lightly floured surface, roll out the puff pastry sheets and cut into squares or triangles.
- Spoon a generous amount of filling onto one half of each pastry piece.
- Fold the pastry over to create a pocket, press edges to seal, and cut small slits on top.
- In a small bowl, mix the egg and milk for an egg wash and brush over the top of each turnover.
Baking
- Place turnovers on a parchment-lined baking sheet and bake for 20-25 minutes, until golden brown and puffed.
- Let them cool slightly before dusting with powdered sugar, if desired. Serve warm.
