Preparation
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine the sliced plums and chopped tarragon. Sprinkle with 1/2 cup of sugar and mix well. Set aside.
Making the Batter
- In a separate bowl, whisk together the flour, baking powder, salt, remaining sugar, milk, melted butter, and vanilla extract until just combined. The batter should be smooth but not over-mixed.
Assembling and Baking
- Pour the batter into a greased 9x13-inch baking dish. Spoon the plum mixture over the batter evenly.
- Place in the preheated oven and bake for 30-35 minutes, or until golden and a toothpick comes out clean.
Serving
- Allow to cool for a few minutes before serving warm, possibly with a scoop of ice cream.
Notes
For substitutions, if fresh tarragon is unavailable, use 1 tablespoon of dried tarragon or other fruits like peaches or cherries.
