Preparation
- Wash your plums thoroughly. Halve and pit them, then chop them into smaller pieces.
- In a medium saucepan, combine the chopped plums and a splash of water over medium heat.
- Cook them down, stirring occasionally, until they're soft and mushy—about 10 minutes.
- Transfer them to a blender or food processor, adding sugar and lemon juice if you're using them. Blend until smooth.
- Line a baking sheet with parchment paper or a silicone baking mat. Pour the plum puree onto the sheet, spreading it evenly into a thin layer.
Drying
- Preheat your oven to the lowest setting (around 170°F or 77°C) and place the baking sheet inside.
- Let it dry for about 6-8 hours, or until the leather is no longer sticky and feels pliable to the touch.
Cooling and Cutting
- Once dried, allow the fruit leather to cool completely.
- Peel it off from the parchment paper and cut it into strips or squares.
Notes
Store the fruit leather in an airtight container for up to two weeks at room temperature or refrigerate for up to a month. For longer preservation, freeze wrapped pieces in wax paper.
