Preparation
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan. You can also line it with parchment paper for easier removal.
- In a mixing bowl, beat the softened butter and sugar together until light and fluffy. This should take about 3-5 minutes.
- Beat in the eggs one at a time, ensuring each one is well incorporated before adding the next.
- In a separate bowl, whisk together the flour, baking powder, salt, and optional cinnamon.
- Add the milk and vanilla extract to the creamed mixture and blend well.
- Gradually add the dry mixture to the wet ingredients, mixing until just combined (do not overmix).
- Gently fold in the sliced plums, ensuring they are evenly distributed.
Baking
- Pour the batter into the prepared cake pan and smooth the top. Bake in the preheated oven for 35-45 minutes, or until a toothpick inserted into the center comes out clean.
Cooling and Serving
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Slice and enjoy!
