Ingredients

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon (optional) Adds warmth to the flavor
Wet Ingredients
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1/2 cup milk Can substitute with almond milk
  • 1 teaspoon vanilla extract
Fruits
  • 2 cups plums, pitted and sliced

Method

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan. You can also line it with parchment paper for easier removal.
  2. In a mixing bowl, beat the softened butter and sugar together until light and fluffy. This should take about 3-5 minutes.
  3. Beat in the eggs one at a time, ensuring each one is well incorporated before adding the next.
  4. In a separate bowl, whisk together the flour, baking powder, salt, and optional cinnamon.
  5. Add the milk and vanilla extract to the creamed mixture and blend well.
  6. Gradually add the dry mixture to the wet ingredients, mixing until just combined (do not overmix).
  7. Gently fold in the sliced plums, ensuring they are evenly distributed.
Baking
  1. Pour the batter into the prepared cake pan and smooth the top. Bake in the preheated oven for 35-45 minutes, or until a toothpick inserted into the center comes out clean.
Cooling and Serving
  1. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Slice and enjoy!

Notes

For a dairy-free version, substitute butter with coconut oil. Store the cake wrapped in plastic wrap in an airtight container for up to 5-7 days in the refrigerator or freeze individual slices for up to 3 months.
