Ingredients
  

Main ingredients
  • 2 cups plums, pitted and chopped Fresh or thawed from frozen
  • 1 cup oats Regular or gluten-free oats
  • 1/2 cup flour All-purpose or gluten-free flour
  • 1/4 cup brown sugar Could substitute with coconut sugar
  • 1/4 cup honey or maple syrup For sweetness; adjust according to taste
  • 1/2 teaspoon cinnamon Adjust to preference
  • 1/4 teaspoon salt
  • 1/2 cup butter, melted Can substitute with coconut oil for dairy-free
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine oats, flour, brown sugar, cinnamon, and salt. Stir until well mixed.
  3. Add melted butter, honey (or maple syrup), and vanilla extract to the dry mix. Stir until fully combined; mixture should be crumbly.
  4. Gently fold the chopped plums into the mixture until evenly distributed.
  5. Grease an 8x8 inch baking dish, pour the mixture into the pan, and spread it evenly while pressing down gently to compact it.
Baking
  1. Bake in the preheated oven for 25-30 minutes or until the edges are golden brown.
  2. Let the bars cool in the pan for at least 10 minutes before cutting them into squares.

Notes

These bars can be topped with honey, maple syrup, nuts, or yogurt. Best stored in an airtight container in the fridge for up to a week, or frozen for three months.
