Preparation
- Preheat your oven to 350°F (175°C). Grease a round cake pan with butter and line it with parchment paper.
- In a medium bowl, whisk together the almond flour, all-purpose flour, baking powder, and salt until well combined. Set aside.
- In a large mixing bowl, beat the softened butter and sugar together using an electric mixer until light and fluffy, about 3 to 4 minutes.
- Add the eggs one at a time, mixing well after each addition, then add the vanilla extract and mix until smooth.
- Gradually add the dry ingredient mixture to the wet ingredients, mixing gently until combined; do not overmix.
- Gently fold in the sliced plums, ensuring an even distribution throughout the batter.
Baking
- Pour the batter into the prepared cake pan and smooth the top with a spatula.
- Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
Cooling and Serving
- Let the cake cool in the pan for 10 minutes before transferring it to a wire rack.
- Serve warm or at room temperature, optionally dusted with powdered sugar.
