Preparation
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a bowl, whisk together the ground pistachios, all-purpose flour, baking powder, and salt until well blended.
- In a large mixing bowl, beat the softened butter and sugar together until light and fluffy, about 2-3 minutes.
- Incorporate the eggs one at a time, mixing well after each addition. Sprinkle in the vanilla extract and blend until smooth.
- Gradually add the dry mixture to the wet ingredients, alternating with the milk, and mix just until combined. Be careful not to overmix.
- Gently fold in the crushed raspberries, ensuring they are evenly distributed without breaking them too much.
- Pour the batter into the prepared cupcake liners, filling each about two-thirds full.
Baking
- Place in the oven and bake for 18-22 minutes or until a toothpick inserted in the center comes out clean.
- Once baked, let the cupcakes cool in the tin for 5 minutes before transferring them to a wire rack. Allow them to cool completely before frosting.
Notes
