Cookie Dough
  • 1 cup unsalted butter, softened Make sure it's at room temperature.
  • 1 cup brown sugar Packed.
  • 1/2 cup granulated sugar
  • 1 large egg Room temperature.
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup pistachio cream Or finely ground pistachios with sugar.
  • 1 cup semi-sweet chocolate chips

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until fully combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add to the butter mixture, mixing until just combined.
  5. Fold in the pistachio cream and chocolate chips until evenly distributed.
  6. Use a cookie scoop to drop mounds of dough onto the baking sheet, leaving space between each cookie.
Baking
  1. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the centers remain soft.
  2. Allow cookies to cool on the baking sheet for a few minutes before transferring to wire racks to cool completely.

Notes

To keep cookies fresh, store in an airtight container for up to a week. For longer storage, freeze in single layers before placing in a freezer-safe bag.
