Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the sugar and softened butter until light and fluffy (about 2-3 minutes).
- Add the egg and vanilla extract to the mix, beating until well incorporated.
- In another bowl, combine the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, mixing just until combined.
- Gently fold in the chopped pineapple.
- Scoop out tablespoon-sized portions of the cookie dough onto a parchment-lined baking sheet.
- If using, place a Maraschino cherry in the center of each cookie and sprinkle with brown sugar.
Baking
- Bake for about 10-12 minutes or until the edges start to turn golden brown.
- Allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
For a twist, substitute regular sugar with coconut sugar. Don't over-mix the dough after adding flour to prevent tough cookies. Experiment with different fruity toppings!
