Ingredients
  

Cookie Dough
  • 1 cup sugar
  • 1/2 cup butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup chopped pineapple, drained
Toppings
  • Maraschino cherries optional Maraschino cherries Optional for decorating
  • Brown sugar Brown sugar for topping To sprinkle on top of cookies

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the sugar and softened butter until light and fluffy (about 2-3 minutes).
  3. Add the egg and vanilla extract to the mix, beating until well incorporated.
  4. In another bowl, combine the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, mixing just until combined.
  5. Gently fold in the chopped pineapple.
  6. Scoop out tablespoon-sized portions of the cookie dough onto a parchment-lined baking sheet.
  7. If using, place a Maraschino cherry in the center of each cookie and sprinkle with brown sugar.
Baking
  1. Bake for about 10-12 minutes or until the edges start to turn golden brown.
  2. Allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For a twist, substitute regular sugar with coconut sugar. Don't over-mix the dough after adding flour to prevent tough cookies. Experiment with different fruity toppings!
