  • 1 pound chicken breast, cubed
  • 1 pineapple, diced (fresh or canned)
  • 1 bell pepper, chopped (any color)
  • 1 red onion, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce (make sure it’s halal)
  • 1 tablespoon honey
  • Salt and pepper to taste
  • Skewers (wooden or metal, soaked in water if wooden) Use wooden skewers soaked in water to prevent burning.

Method
 

Preparation
  1. Start by cutting the chicken breast into bite-sized cubes.
  2. Chop the pineapple, bell pepper, and red onion into similar-sized pieces to ensure even cooking.
Marination
  1. In a mixing bowl, whisk together the olive oil, soy sauce, honey, salt, and pepper.
  2. Add the cubed chicken to the marinade, ensuring each piece is well coated.
  3. Let it sit for at least 15 minutes (or up to an hour in the refrigerator) for optimal flavor.
Assembly and Cooking
  1. Alternate the marinated chicken, pineapple, bell pepper, and onion on the skewers.
  2. Preheat your grill or grill pan over medium-high heat.
  3. Place the skewers on the grill and cook for 10-12 minutes, turning occasionally.
  4. Ensure the chicken is cooked through with an internal temperature of 165°F and the vegetables soften slightly.
Serving
  1. Remove the kabobs from the grill, let them cool for a minute, then serve with a side of rice or a fresh salad.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. You can also freeze the kabobs before cooking for up to 2 months.
