  • 1 can (20 oz) crushed pineapple, with juice
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1 cup milk
  • ¼ cup unsalted butter, melted
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1 pinch salt
Optional Toppings
  • to taste Ground cinnamon or brown sugar For topping.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the melted butter, sugar, milk, and vanilla extract until well blended.
  3. Gradually mix in the flour, baking powder, and salt. Stir just until combined—lumpy batter is totally fine!
  4. Gently fold in the crushed pineapple along with its juice.
  5. Pour the batter into a greased 9x13 inch baking dish and spread evenly.
Baking
  1. Place in the oven and bake for about 25-30 minutes, or until the top is golden brown and a toothpick comes out clean.
  2. Let cool slightly, then serve warm topped with extra pineapple or a scoop of vanilla ice cream.

Notes

For best flavor, try using fresh pineapple and sautéing slightly before adding. Experiment with adding nutmeg or coconut milk for a twist.
