Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the melted butter, sugar, milk, and vanilla extract until well blended.
- Gradually mix in the flour, baking powder, and salt. Stir just until combined—lumpy batter is totally fine!
- Gently fold in the crushed pineapple along with its juice.
- Pour the batter into a greased 9x13 inch baking dish and spread evenly.
Baking
- Place in the oven and bake for about 25-30 minutes, or until the top is golden brown and a toothpick comes out clean.
- Let cool slightly, then serve warm topped with extra pineapple or a scoop of vanilla ice cream.
Notes
For best flavor, try using fresh pineapple and sautéing slightly before adding. Experiment with adding nutmeg or coconut milk for a twist.
