Preparation
- Start by slicing your ribeye steak into thin strips. The thinner, the better! Likewise, slice the onion and green pepper.
Cooking the Vegetables
- In a large skillet, heat a tablespoon of olive oil over medium heat. Add the sliced onions and bell peppers, seasoning with salt and pepper. Sauté for about 5-7 minutes until soft and lightly caramelized, then remove from the pan and set aside.
Cooking the Steak
- In the same skillet, add more olive oil if needed. Increase the heat to high and add the sliced ribeye steak. Cook for about 3-4 minutes until browned but still tender.
Combining
- Lower the heat to medium and add the cooked vegetables back into the pan. Mix well and let flavors mingle for an additional minute.
Melting the Cheese
- Lay the provolone cheese slices on top of the meat and veggie mixture. Cover the pan for a few minutes until the cheese melts.
Assembly
- Slice the hoagie rolls down the middle without cutting all the way through. Fill each roll with a generous portion of the beef and cheese mixture.

Notes
