Preparation
  1. Gather all your ingredients and have them ready. This makes cooking much smoother.
  2. In a skillet, heat the olive oil over medium heat.
  3. Carefully crack the eggs into the skillet. Season with salt and pepper, allowing them to cook undisturbed for about 3-4 minutes for sunny-side-up eggs, or until the whites are set but the yolk remains runny.
  4. When the eggs are almost done, gently spoon the pesto over the eggs. Cover the skillet with a lid for an additional minute. This helps the pesto warm up and blend with the eggs.
  5. Carefully slide the eggs onto a plate. Drizzle a little extra pesto on top, if desired, and serve with your favorite bread.

Notes

Customizable with various pesto types and toppings such as cherry tomatoes, cheese, or avocado. Store leftovers in an airtight container for up to 2 days.
