  • 1 cup pumpkin puree
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup butter, softened
  • 1 large egg
  • 2 teaspoons vanilla extract
Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 teaspoons pumpkin pie spice
  • 1/2 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter, sugar, and brown sugar until light and fluffy (about 2-3 minutes).
  3. Blend in the pumpkin puree, egg, and vanilla extract until well combined.
  4. In another bowl, whisk together the flour, baking soda, baking powder, pumpkin pie spice, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not over-mix.
  6. Using a cookie scoop or spoon, drop dollops of dough onto a lined baking sheet, leaving space between each cookie.
Baking
  1. Bake for 12-15 minutes or until the edges are lightly golden.
  2. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

For chewier cookies, chill the dough for 30 minutes before baking. Store in an airtight container at room temperature for up to one week or freeze for up to three months.
