Ingredients
  

Dry Ingredients
  • 1 cup cornmeal
  • 1 cup all-purpose flour Can substitute part with whole wheat flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ¼ cup granulated sugar Adjustable to taste, can use honey or agave syrup
Wet Ingredients
  • 1 cup milk Can be dairy or non-dairy
  • 1 large egg
  • ¼ cup vegetable oil Or melted butter

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Grease a square 8x8-inch baking dish or a cast iron skillet with oil or butter.
Mixing Ingredients
  1. In a large mixing bowl, whisk together cornmeal, flour, baking powder, salt, and sugar.
  2. In a separate bowl, whisk together milk, egg, and oil or melted butter until well combined.
  3. Pour the wet mixture into the dry ingredients and stir until just combined. Avoid overmixing.
Baking
  1. Transfer the batter into your prepared pan and spread it evenly.
  2. Bake in the preheated oven for about 20-25 minutes, or until the top is golden brown and a toothpick comes out clean.
  3. Allow to cool for a few minutes, then cut into squares and serve warm.

Notes

Store any leftovers in an airtight container in the refrigerator for 3-4 days, or freeze for up to 2 months. Reheat in the oven at 350°F (175°C) for 10-15 minutes.
