Preparation
- Preheat your oven to 400°F (200°C).
- Grease a square 8x8-inch baking dish or a cast iron skillet with oil or butter.
Mixing Ingredients
- In a large mixing bowl, whisk together cornmeal, flour, baking powder, salt, and sugar.
- In a separate bowl, whisk together milk, egg, and oil or melted butter until well combined.
- Pour the wet mixture into the dry ingredients and stir until just combined. Avoid overmixing.
Baking
- Transfer the batter into your prepared pan and spread it evenly.
- Bake in the preheated oven for about 20-25 minutes, or until the top is golden brown and a toothpick comes out clean.
- Allow to cool for a few minutes, then cut into squares and serve warm.
Notes
Store any leftovers in an airtight container in the refrigerator for 3-4 days, or freeze for up to 2 months. Reheat in the oven at 350°F (175°C) for 10-15 minutes.
