Ingredients

For the Taquitos

  • 1 cup pepper jack cheese (shredded)
  • 1/2 cup cream cheese (softened)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 10 small corn or flour tortillas Use soft tortillas for better rolling
  • as needed spray/oil cooking spray or a little bit of oil for baking For crispiness

Method

Preparation
  1. Preheat your oven to 425°F (220°C) to ensure a crispy finish.
  2. In a large mixing bowl, combine the shredded chicken, pepper jack cheese, cream cheese, garlic powder, onion powder, cumin, salt, and black pepper. Mix until well combined.
  3. Heat the tortillas in a dry skillet over medium heat for about 30 seconds on each side to make them pliable.
  4. Place about 2 tablespoons of the chicken mixture onto each tortilla. Roll them tightly and place seam-side down on a baking sheet.
  5. Lightly spray the tops of the taquitos with cooking spray. Bake in the preheated oven for about 15-20 minutes, or until they are golden and crispy.
  6. Once out of the oven, let them cool slightly. Serve alongside your favorite dips and enjoy!

Notes

Feel free to substitute the pepper jack cheese with your favorite variety, and avoid overstuffing your tortillas. Store leftovers in an airtight container in the refrigerator and enjoy within 3 days.
