Ingredients

  • 1 cup all-purpose flour
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter, melted
  • 2 large eggs should be at room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup corn syrup
Add-ins
  • 1 cup chopped pecans toasted for enhanced flavor

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease or line a muffin tin with paper liners.
  2. In a large mixing bowl, whisk together the all-purpose flour, brown sugar, granulated sugar, baking soda, and salt.
  3. In another bowl, combine the melted butter, eggs, vanilla extract, and corn syrup. Whisk until smooth.
  4. Pour the wet mixture into the dry ingredients. Stir until just combined without overmixing.
  5. Gently fold in the chopped pecans.
Baking
  1. Spoon the batter into the muffin cups, filling each about two-thirds full.
  2. Bake in the preheated oven for about 18-20 minutes or until a toothpick inserted comes out clean.
  3. Allow the muffins to cool in the pan for about 5 minutes before transferring to a wire rack.

Notes
